What is Maggi (Magi) in African cooking

More often than not, African recipes call for the use of Maggi. maggi is a term that has been used to replace all forms of Bouillon cube, Maggi is also a common brand of Bouillon cube in West Africa.

Other Bouillon cube variety includes : Royco, Doyin, Knorr . Depending on the make, these cubes come in different flavor variety e.g Chicken, Beef, Crayfish, Shrimp or vegetable. when used in deep spiced dishes, the flavor differences are often overpowered.

Common Ingredient in all varieties include: Salt, dehydrating vegetables, meat stock, a small portion of fat, seasonings and MSG (Monosodium glutamate).

For recipes that calls for the use of Maggi, substitute any available Bouillon cube variety.
