Parsley Salad


Parsley Salad (Nutrition Profile of Parsley)

Some nights ago, I had no clue what to eat for supper. I looked in my vegetable cabinet and I brought out the items pictured (below).

I had no idea what I was going to make, in about 10mins. I ended up with this:

After supper, I decided to do a little research on Parsley and here is what I found:

On all accounts, parsley is a super food. Check out the Vitamin A,C and K value, also the minerals in this stuff is amazing.

ps:ย There is no Yoruba name for parsley, as it isย not originally West African. You can get the seeds and plant them, they will grow in tropical and sub tropical, will grow in the summer in temperate countries.

    I ask a woman yesterday she said its ewedu, and really in need or this Parsley leaves, i need it for my Mum and Grand Mum and also a friends Mum, even for my self, Ewedu is also good, but i don’t think it can substitute for Parsley… please any one with info get back to me… [email protected]

      It’s definitely not ewedu, ewedu is jute leaf.

    My sister once got parsley for me at mushin market. It actually has a yoruba name but I don’t remember it. Just show d market women the leaves. They know it when they see it. Check shoprite as well. Osata supermarket in ikeja used to stock it…don’t know about now. I assure you, the leaves are not as scarce as they seem. You didn’t notice it cos you’ve not had any reason to in the past. I should get some tomorrow. Will come back to give an update on the local name.

      Unfortunately not. Scent leaf is not a substitute for parsley.

    Yes, Parsley is a super herb/vegetable/spice. You should get Parsley at Shoprite but if not get in touch with … for organic Parsley.

      You should be able to find it in shoprite.. unfortunately I am not sure of the local name.

    I grew parsley in my house in Jos. It’s the only plant in my house that does not die. I cut and wind dry is and it grows out new ones. In fact I had a test last time and my test proved that I had no problem in my body at all. Imagine at the age of 54 and my my body is in perfect condition. The one I love the most is the tea. It’s not nay sweet but helps to elevate mY mood without any bad affect at the end. Parsley is a plant I can’t do without. No way I must have it anywhere I go to.

      I don’t think there is a Yoruba Name for parsley, the herb is not native to Nigeria.

    I’ve used Parsley in the past in place of some naija vegs but now do more of spinach cos I can get it cut and frozen. I should diversify again.

      The good thing is that fresh parsley is available all year around. I was thinking of mixing it with spinach for vegetable soup ๐Ÿ™‚

    Parsley contains Vitamin C and is a diuretic? Wonderful! I’ve always thought of it as “just a herb” not knowing it had all these other benefits. Thanks for sharing.
