Plantain Masa

Nigerian plantain Masa and Ghanian Tatale are very similar being that they are both made from over ripe plantains; the variation in the recipe comes from the types of spices used in Tatale, where masa basically contains plantains, eggs and flour; tatale is made by combining mashed plantains with various spices including ginger and chilli powder. Nigerian Masa

Ingredients:

  • 1 large overripe plantain
  • 1 egg
  • 1 table spoon Flour
  • salt  to taste

Other: Oil for frying

Direction:

  • Heat 1 cup of oil until hot. (In the mean time prepare the plantain mix)
  • Peel and mash the plantain into a fine paste, add in the egg, flour, salt and pepper. Combine well
  • One table spoon at a time, Add the plantain mix to the hot oil, fry on each side until golden brown
  • lift out the masa balls with a slotted spoon and drain on kitchen paper

Ghanian Tatale

Ingredients:

  • 1 large overripe plantain
  • 1 table spoon grated onion
  • 1 table spoon Flour or cornmeal
  • I table spoon freshly grated ginger
  • salt and pepper to taste

Other: Oil for frying

Direction:

  • Heat 1 cup of oil until hot. (In the mean time prepare the plantain mix)
  • Peel and mash the plantain into a fine paste, add in the ginger, flour,onion,  salt and pepper. Combine well
  • one table spoon at a time, Add the plantain mix  to the hot oil, fry on each side until golden brown
  • lift out the masa balls with a slotted spoon and drain on kitchen paper. Repeat the process until everything is fried
