Ingredients

1.5 lbs fish (any kind really, I used tilapia because I have a soft spot for this fish :D)

1 large onion, sliced
5 cloves of garlic
3 medium sized tomatoes, diced
3 tbsp vegetable oil
1 tsp red chili powder
1 tsp turmeric
1 tsp coriander
5 tbsp lemon juice (Recipe called for 4bsp tamarind paste but I substituted with fresh lemon juice)
1/2 cup of coconut milk (I used light coconut milk)
Salt to taste

Instructions:

In a large bowl, add salt, red chili powder, turmeric, coriander and lemon juice to make marinade. Add the fish and ensure
that it’s well coated with marinade. Let sit on the counter/fridge while you make the sauce.
Heat oil in a large saucepan. Add onions, garlic and a pinch of salt and let simmer (covered) until slightly brown.

Add tomatoes to the onion-garlic sauce. Let cook until the tomato skin begins to peel off forming a paste.

Add the fish+marinade to the skillet and stir gently to avoid breaking the fish. Add 1/2 cup of water–you can rinse the marinade bowl with this water first to get all the spices still in the bowl. Add the water+ leftover spice  to the sauce.
Optional: add green chillies for a very spicy dish
Let cook for approximately 10 minutes before adding coconut milk. Once coconut milk is added, cover and let simmer for two minutes and tada! Dinner is ready!
Serve with rice or bread..I had mine over brown rice. Yum yum yum!
