Pan seared coconut Chicken Thighs
6 chicken thighs (cleaned)
½ green peppers (chopped)
4 garlic cloves (minced)
½ onions (Chopped)
¼ cup coconut oil (substitute olive oil*)
1tsp salt
1 tsp each (Italian seasoning, rosemary, thyme) (A)
½ tspn ground black pepper
Direction
- Season the chicken with the salt, and all the spices listed in A. marinate for 4 hours
- Place a large skillet over medium heat and add oil, once the oil is hot, place the chicken thighs in skin side down (be sure not to crowed the pan, if you are using a smaller frying pan or skillet, Try searing the chicken in batches) sear on each side for 4mins, remove from oil and set to rest on a paper towel.
- Add in the onion and garlic to the left over oil, satay for 3-4 mins (stir continuously). Add in the chopped green pepper and some salt and pepper. Remove from heat and serve with the chicken.
Enjoy the chicken as a main dish or as a side
* Using olive oil instead of coconut oil defeats the purpose of the “Coconut Chicken*, but the chicken still tastes as great*

If olive oil can be substituted for the coconut oil how is it still coconut chicken? Just thought I should point this out. Keep up with the inspiring dishes.
Valid point John, but due to health reservations with Coconut oil I thought a substitute would be appropriate. Thanks for the comment

My pleasure … I also can’t resist asking … how did you get your dodo to shape up like that. Did you use a biscuit cutter? I tried pressing raw plantain before frying, but I only ended up with crushed plantain.lol. Abeg tips xxx

LOL@Crushed plantain, try using semi ripe plantain instead of ripe.
Okay oh – my report is long overdue. Anyway, Friday and Saturday ended up being really busy so I didn’t make this until Sunday although my chicken had been marinating all that time. It was very delicious – my pics look nothing like yours and I think I know why but sha, I enjoyed it – easy to make and a great addition to my menu plan…I served it with potatoes because when I started looking at the peppers in oil, I really wanted to eat it with some yam sha… I added plenty of pepper to the sauce cos we eat pepper in my house…
Here are some lessons learned:
1. Need to use ground Rosemary/Thyme cos ds wasn’t feeling all the herbs he had to chew through so he didn’t eat much of it
2, Don’t think my dry spices mixed as well as I thought since a few came out being really salty – it was really just a few
My only complain was that I had expected to taste the Coconut flavor some more but didn’t – was there something I should have done?
Also, for larger batches, do you just multiply? or is there another method to increasing?

Waoooooo…. excellent review. okay…. did you use organic coconut oil? I never use the generic thing because it is mixed with other oil.
yeah… just multiply through for large batches, rosemary needs some getting used to, even the fresh one is a bit tough. I am happy you liked the recipe
