Suya Spiced Salmon Fillet.
This is a very healthy way to enjoy fish. Here I have spiced salmon with shrimp and mixed vegetables.
Ingredients
2 (serving size) salmon fillet
Salt and black pepper to taste
1 Tablespoon suya spice mix
1 table spoon olive oil
1 cup mixed vegetables
1 small tomato (sliced) (optional)
Direction
- Prepare the fish by rubbing in the salt, pepper and suya spice mix. once the fish is evenly coated, set aside.
- Place a large pan on medium heat, add in the oil. once the oil is hot (about 2-3mins) place your salmon in, skin side down. let the fish cook for about 4 mins, then flip the fish over and cook for another 1-2mins(depending on how pink you like the center). Remove the fish from the pan, set on a paper towel.
- Add the mixed vegetables and tomato into the pan, sprinkle in some salt and pepper. Stir. let it simmer for 3mins. Remove from heat. Serve the veggies on the salmon.

PS: if you don’t have Salmon or you don’t like salmon, you can substitute Trout, Perch, Croaker or Tilapia.

Most African grocery store carry prepared suya spice mix.
